Apple dessert

I love apples and cinnamon. Apples desserts are hard to mess up so I thought it would be a great dish to try in the not so hot solar cooker.

I wanted to try out my solar cooker that I made but didn't want to ruin anything. I thought apple dessert would be perfect because you can eat it raw.

This can be cooked in a solar cooker or a regular oven.

Ingredients:
4 Apples (diced)
2 tbs cinnamon
1 tbs sugar
Juice of a lime
Granola (I prefer flavored like vanilla)
3 tbs butter

Mix apples, cinnamon, sugar, and lime in your baking dish (I use Pyrex). Sprinkle enough granola to cover the apple mixture. Dollop the butter over the granola and then cover in foil.

I cooked it in the solar oven from 2 to 6. If you bake it in the oven I would suggest 350 degrees, until the apples are tender.

Vegetarian enchilada casserole

-1 each :
yellow pepper
orange pepper
red pepper
ancho pepper
anaheim pepper
big onion
can of black beans
can of kidney beans
can of sliced olives
Mix all above ingredients in a bowl

big can of green enchilada sauce
package of corn tortillas
Pepperjack cheese

Preheat oven to 350*
Layer sauce, tortillas, mixture, over and over until casserole dish is full.
Cover with foil and bake for one hour.
Remove foil add a layer of cheese and bake for 15 additional minutes then broil until bubbly and golden brown.

Chocolate smoothie

One banana, one cup of orange juice, 2 packs of chocolate cocoa mix, milk to top off blender. Blend, pour, and enjoy!!!!!!

Veggie overload Thai delight

Sauté sliced and diced veggies. Add sauce. We mix the sauces and fix it up to our own liking aka spicier. Start with the Thai sauce and go from there. A little of this and a little of that. Serve over rice or noodles.

Breakfast flowers

Brodie is always looking for new ways to eat eggs. We found this on pinterest so we thought we would give it a try.

Three pieces of Canadian bacon and one egg per muffin cup.
I scramble eggs with salt, pepper, cheese, and worstershire.
I greased the muffin pan and preheated the oven to 350*
Place three pieces of meat in muffin tin and fill evenly with egg.
Bake for twenty minutes.
Brodie ate them on English muffins.
This is easy and allows me more time for being a short order cook.

Banana bread

Yummy!!!!!

D and I made banana bread today. It is so easy and makes a quick and healthy snack.

I doubled the recipe because we had ten bananas that needed to be used.

First, start with ripe bananas.

Second, preheat oven to 350*

Third, smash bananas. I use a potato masher but I had squished them in a big ziplock before.

Fourth, mix:
-4-5 mashed bananas
-2 cups of flour
-1 cup sugar (I use half white & half brown)
-2 large eggs
-1/2 cup veg oil
-1 tsp baking powder
-1/2 tsp salt
-1 tsp vanilla

Pour into 1 greased (rubbed down with oil) bread pan or muffin tins.

Bake for one hour. Poke with toothpick, if it comes out clean it's done. If not done set and check again in 5 minutes.

Additions:
1/2 cup nuts
1/2 cups chocolate chips
Really whatever you think would be good. Raisins, craisins, cinnamon, whatever.............do not add too much of any thing as it can mess up how much moisture is in the dough.

Crosscut oven fries

Tonight I was craving French fries and really wanted to use my new mandolin. I cut the crosscut fries then soaked them in cold water and salt for about 15 minutes. Once soaked I towel dry a cookie sheet layers worth of the fries and lay them out single layer on a pamed pan. I spray oil on top as well. Spinkle with salt, pepper, or any seasoning you prefer. Bake at 425 for 20 minutes.
Cool and enjoy

Vegetarian enchiladas

Enchilada sauce:
-2 cans of tomato sauce
-2 tbs fresh ground cumin
-1 tsp garlic
-1 tbs diced onion
-1 tsp chili powder
Or 2 cans of tomato sauced mix with 1 pack of taco seasoning.

Filling:
-corn tortillas
-2 cans refried beans
-1 can black beans
-2 cans olives
-1 onion diced
-1 big tomato diced
-1 lb of pepperjack cheese

Preheat oven to 350*
In a big casserole dish put a spoonful or two of enchilada sauce down a smear around. Layer 6 small corn tortillas smear one can of beans on tortillas layer. Sprinkle half the can of black beans on the layer. Add one can of olives, half the onion, half the tomato, and one third of the cheese evenly to this layer. Sprinkle with a couple tbsp full of sauce and repeat
After the second layer is complete top with 6 more tortillas, the rest of the cheese, and the remaining sauce.

Bake for 45 minutes to one hour or until bubbly and golden brown.

Add ins:
Whatever you would like

Toppings:
Guacamole
Sour cream
Olives
Onion

Apple crisp

I made this amazing apple dessert out of some apples I had.
I used 6 apples, 2 granny smiths, 4 figis.
I diced the apples and tossed them in juice squeezed from 1 oranges, brown sugar, and cinnamon.
Set apples aside and mix a box of yellow cake mix with a half a cup of brown sugar, one to two table spoons of cinnamon.
Add one stick of softened butter to dry mixture until well mixed.
Cover apple mixture with cake mixture.
Cook covered for 30 minutes at 350 and uncover for another 20 to 30 minutes until golden brown.

Kale and potato soup

Yummy, easy, and really good for you.
-Potatoes (any kind)
-Kale
-Vegetable broth

Fill a big pot with broth and turn on medium heat. Slice potatoes into rounds and put into pot (I use 1 per person). Tear the kale leaves off the stems and put the leafy part into the pot. Cover with a lid and simmer until potatoes are done.

Extras:

Add pepper flakes when cooking to add heat.

Add tbsp of heavy cream to make a creamier broth.

Add extra veggies like mushrooms, carrots, celery, onion, or garlic.

Add meat to make it non vegetarian. Hot sausage is a great addition.
